Over Thyme pairs our dry and crisp Q Spectacular Tonic Water with tart grapefruit juice for a bright, refreshing cocktail with a subtle herbal finish.

Ingredients

1½ oz Gin

1 oz Fresh Red Grapefruit Juice

½ oz Honey

4 oz Q Spectacular Tonic Water

Thyme

Method

Disolve honey in grapefruit add gin and shake. Strain into a highball glass and top with Q Spectacular Tonic Water, garnish with thyme sprig.

Add a spicy salt rim by mixing salt and jalapeno. Run a lime along the rim of a highball glass, then dip the rim into the salt mixture. For a smokier drink try mezcal rather than tequila. A tiny splash of agave is a fun way to add some sweetness
