Ingredients

1 ½ oz Gin

0.5 oz Lemon Juice

0.5 oz Honey

4 oz Q Ginger Beer

1 Lavender or Thyme Sprig Garnish

Method

Dissolve the honey in the lemon juice, add the gin and shake. Strain into a highball glass filled with ice and top with ginger beer.

PRO TIP

Add a spicy salt rim by mixing salt and jalapeno. Run a lime along the rim of a highball glass, then dip the rim into the salt mixture. For a smokier drink try mezcal rather than tequila. A tiny splash of agave is a fun way to add some sweetness
